I need to double check, once I bring up Operations Manager 2007 that there is NO automatic discovery of servers or network resources... right?  I thought this was the case but saw a newgroup post that shakes my confidence.

Out-of-box that is correct.  There is a way to set up automatic computer discovery though: http://blogs.technet.com/momteam/archive/2007/12/10/how-does-computer-discovery-work-in-opsmgr-2007.aspx.
