I'd like to get report data (if ccm collects it) about the "top running processes" in our database.

We are hoping to do some optimization on our PCs and get rid of unnecessary processes.

An ideal report would look like

# of instances   name of process
500                  svchost.exe
300                  hkcmd.exe
etc...

Well, do you have software metering turned on or have you enabled the WIN32_PROCESS class in the sms_def.mof (which is off by default)?  If you have neither of those enabled, then you'll find it very difficult to get any information without rolling your own script to enumerate running processes and delivering it to the enterprise.

The problem is that this is a "snapshot" in time.  So if the machine is doing some heavy processing at the time then it will show up.  But if the processing takes place just after the inventory they you don't have a good picture.

True-dat on the Win32_Process. 

I think you can still get an OK indication of what to start metering for using WIN32_PROCESS (granted it's not perfect because it's a snapshot in time, but still) and then the metering data that comes in will give a more accurate account of what's running, who's running it and for how long.
