My company is getting ready to deploy SCCM 2007 and I am under the impression that SCCM does not support Office 2000 patching.  Our initial plan is to upgrade these clients to Office 2003 or higher prior to our migration.   Please only people that have updated to SCCM and patched Office 2000 systems using a SUP need to respond.

Office 2000 is not supported by Microsoft Update or ITMU in SMS 2003. The old Office Scan Tool had to be deployed to scan for patches. I can't imagine that it would be different in WSUS.

I can confirm by looking at the Software Updates tree in the SCCM console that Office 2000 is not listed as a product that can be updated. Your Office options are: Office 2007, 2003 and 2002/XP. You also need to be aware of the "end of life" limitations on 2003 and 2002/xp. I'm not sure when they will expire, but if you are upgrading clients now, it would make sense to go ahead and get the 2007 license so that you don't get nailed with the other product expiring in a couple of years.
