You need to create a custom.msp file.
Run setup.exe /admin,  you will be able to create a custom.msp file.
Put that file in your updates folder. You should also edit the config.xml file.
Microsoft does have documentation on deploying office 2007.
Here's a whitepaper on it.

Deploy it, or customize and package it? For additional customizations you can look here too: http://www.appdeploy.com/packages/detail.asp?id=860.

create your custom installation and add your msp file to the update folder in the program file share. from there you can call the msi or setup file to deply via sms or psexec or some other deployment tool

check out this article. it can probably explain better than i can anyways.

http://technet.microsoft.com/en-us/library/cc179097.aspx

what you do is essentially run this office customization tool and it creates a .msp file. from there you place this .msp file in the folder called updates in the program file share that you will be running the install from. then, everytime you run the setup.exe, it will install with your preconfigured options.

for deployment, you can run this .exe from the command line or run it from sms.
