I've inherited a SCOM server with all roles including database on a single server. It is currently configured with many overrides, operators, etc. It is monitoring a small percentage of our total servers. I want to keep the configuration but, I would like to scale out the solution i.e. separate RMS, reporting, DB server, etc. to monitor all our servers. What is the best way to do this?

 I would Upgrade to SP1 and then follow the various docs about moving databases around. You can't move reporting services until you upgrade to SP1.
We've essentially done some of it (moved DW, brought up second RMS Server) without going to SP1, but there has been pain.
Move Data Warehouse
Move Reporting Services
Move OpsMgr DB

Ideally, you'd want to leave your current server with at least one of the DB roles to minimize the pain of moving.

The BEST way is to start over.  Design OpsMgr, the management group, server specs, etc.... for the load you will be placing on it.  If you have customizations in overrides - those can be moved over to the new environment... and then you can uninstall the other environment when you are happy.
