How can I check to see what roles each SCOM box is holding. I can see that one of them is holding ACS and The other is holding Data Warehouse role but is there an config file or somewhere in the console that would tell me?[8|]

One way would be to use your Discovered Inventory view in your console and changing the target type.  So if you want to know which servers are Management Servers, change the target to Management Server etc etc.

Open and drill into the diagram view for the management group distributed application as well.
